Steak Burrito Salad
Tastes like a burrito, but a hell of a lot more healthy.
2 cups greens (spinach, romaine, iceberg, whatever you like)
1 roma tomato, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
1 Steak, about the size of your fist, any cut you like
2 tbsp canned black beans, heated
2 tbsp mexican rice (see recipe below)
1 tbsp cilantro, chopped
1 tbsp greek yogurt (or sour cream)
1 tbsp salsa
1 tbsp guacamole
2 tbsp cheese, grated
1 tsp oil
S&P to taste
1. Heat a frying pan on your burner. Season your steak with S&P and whatever other seasonings you like (cayenne, paprika, montreal steak spice, chilli powder, garlic powder, onion powder.. whatever). Once the pan is heated, add your steak. Sear each side for about 4-6 minutes, remove from pan and let rest for 10 minutes.
2. While your steak is resting, prep your veggies and heat the beans. Add your greens to a large salad bowl, then top with chopped bell peppers, tomatoes, rice and beans.
3. Once your steak has finished resting, cut it into bite sizes pieces then add you salad.
4. Top your salad with cheese, greek yogurt, salsa and guacamole. Garnish with cilantro.
