Breakfast bowl
A great way to use up leftover ingredients from dinner the night before. Super easy and delicious!
1/4 green pepper, chopped
1/4 red pepper, chopped
1/4 onion, chopped
1/4 jalapeno, chopped (with or without seeds, depending on preference)
1/2 small-medium potato, cut into bite sized pieces
2-3 tbsp canned black beans
1 ounce cheese, grated
2 tbsp cilantro, chopped
1 tomato, chopped
1/2 avocado, chopped
1 egg
1 tsp oil (i prefer avocado oil, but whatever you have on hand works)
Heat frying pan on medium heat then add oil and allow to become hot. Add potatoes and cook for 5 minutes. Add bell peppers, onion and jalapeno and cook for 3 minutes. Add your beans and cook until potatoes are soft. Remove from heat and transfer to bowl.
Cook one egg, sunnyside up on medium heat.
Top your bowl with cheese, then your egg. Then add your tomato and cilantro. Garnish with chopped cilantro.
