Chicken Bacon Ranch Salad (cat approved)

Without the tomatoes, this salad would be a great option on a keto diet. The ranch dressing is a amazing substitute to the bottled variety you find on the shelves of the grocery stores. Not full of weird chemicals and preservatives and a lot less carbs and fat.














2 cups greens (spinach, lettuce, kale, whatever you like)
1 roma tomato, chopped
1/2 cucumber, cubed
1/4 red onion, sliced thinly
1 tbsp guacamole or 1/4 avocado, sliced
1 oz. grated cheese
3 strips of bacon, cook
1 chicken breast
1 tbsp ranch dressing (see ingredients below)
1 tsp oil (any is fine, i prefer avocado oil)
1/2 tsp paprika
1/2 tsp chili powder
1/4 tsp cayenne
S&P to taste

Cut the chicken breast into strips and cook in 1 tsp oil. Add your spices. Cook approximately 7 minutes of until no longer pink throughout. Set aside.

Place your greens in a bowl and top with tomato, cucumber, onion, cheese and bacon. Place your cooked chicken breast and avocado on top. Drizzle with dressing.

Ranch Dressing

1 cup greek yogurt (sugar free)
1 clove of garlic
1 green onion, roughly chopped
1 1/2 tsp dijon mustard
1 tbsp dill (fresh or dried)
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp oregano
s&p to taste

Combine all ingredients in nutribullet of blender and blend until smooth. Lasts about a week in the fridge.
